Despite popular belief, cast iron is actually a terrible conductor of heat. Cooking is all about heat control, so you want a pan that can change temperatures at different points in the cooking process. Cast iron is great at maintaining a single temperature, but offers no heat control. Carbon steel is the best of both worlds, offering heat retention and also reactiveness.

Seasons & Builds Non-Stick Properties
Carbon Steel seasons with each use and builds non-stick properties at the same time. Seasoning is the process of treating the surface of your pan with a stick-resistant coating formed from polymerized oil which fills the small pores of the pan’s surface - it also helps prevent rust.
Heats Faster w/ Great Heat Control
Cast iron has great heat retention, but is a terrible conductor of heat and takes forever to heat up. Carbon Steel is really great at conducting heat and offers you better heat control. So it gets ripping hot, really fast while giving you the ability to control your temperatures better than cast iron.
Lighter & Easier To Handle
Most cast iron pans are so heavy that it can be hard to move around. Carbon Steel is about 50% of the weight of cast iron, meaning you can maneuver your Carbon Steel much easier than cast iron.
